Zucchini with tofu


  • 2 zucchinis
  • 1 tomato
  • 2 serranos peppers
  • ½ onion
  • 1 clove garlic
  • 5 sprigs of coriander
  • 1 tin of corn
  • Salt
  • Pepper
  • ½ tofu block
  • olive oil


  • Chop onion, garlic clove, serranos, and coriander finely
  • Chop the zucchinis into squares or julienne
  • Chop tomato and tofu in small squares
  • Heat the frying pan with oil and add the onions, the garlic clove, the serranos
  • When the onion is crystalline add the zucchini, cover it and leave it for 5min
  • Check, add seasonings, salt, pepper, more seasoning to taste
  • Add the tin of corn and chopped tomato, leave covered for another 5 minutes
  • Add the tofu and mix everything well, check the flavor and turn it off in 3 min.
  • Eat it with refried beans
