Grilled asparagus, bok choy, marinated, grilled & smoked tofu

Look at this yummy greener than green lunch based on asparagus, bok choy, marinated, grilled & smoked tofu with some green spicy rice I made with the leftover green salsa l had made a few days ago. This was really nice so many flavors in one meal, I love it !!

Ingredients from 2 to 3 people 

  • 1 bunch of asparagus
  • 4 bunches of fresh bok choy
  • About 10 small squares of smoked tofu
  • lemon pepper
  • salt to taste
  • one lime
  • 2 garlic cloves
  • paprika
  • black pepper
  • soy sauce
  • agave syrup
  • olive oil
  • garlic powder
  • white pepper

Smoked Tofu

  • 1 block or slid smoked tofu ( Chinese shops, organic shops)
  • marinate the tofu in a big bowl with
  • half of a lemon
  • 1tsp agave syrup
  • 1tsp soy sauce
  • 1tsp olive oil
  • leave it on the side for the time you are cooking the rest
  • come back to it and grill it on high heat
  • serve until very crispyGrilled asparagus
  • wash, trim and discard the thick base of the bottom
  • heat 1tbs of olive oil over high heat
  • add the asparagus
  • add lemon pepper, paprika, salt, garlic powder and some lemon drops all to taste on top of the asparagus
  • keep moving them until they look grilled
  • don’t cook them too much I personally like them crunchy

Bok choy

  • wash, trim and discard the thick base of the bok choy
  • chop 2 garlic cloves very fine and fry them in 1 tbs olive oil until you smell them
  • add the bok choy
  • add white pepper, salt and some more garlic powder to taste
  • keep moving them until you see the leaves are softer
  • they are very juicy so no worries they don’t need to be dry
