Cochinita Pibil- Oyster Mushrooms and Carrots

Ingredients 2-3 people

  • 1 shredded carrot
  • ½ kilo of shredded oyster mushrooms (Belleville or Carrefour if you live in Paris)
  • 1 Yellow onion
  • Jalapeños  (nachos shape about 8 slices or 1 big whole)
  • A splash of jalapeño vinegar (1 ½ tablespoon)
  • Achote (cut it into 8 parts and put only one of these as it is super strong)
  • Vegetable seasoning (to taste remember that it is salty)
  • Salt to taste
  • Pepper to taste
  • 1 chile pasilla
  • 2 red chilies or huajillos
  • 3 garlic cloves
  • The juice of half a lemon
  • Juice of a little less than half a rose grapefruit  (did not have pineapple or orange, this was at home)


  1. Boil the chile pasilla, the chiles huajillos, 3 cloves of garlic and half an onion (unveils the peppers)
  2. Once boiled the previous thing you pour it in the blender without the water and you add the achiote, the jalapeño, the vinegar, the salt, the pepper, the seasoning, the juice of half a lemon and the juice of the grapefruit. (taste it and sauce is ready)
  3. Fry 1 tablespoon of olive oil, cut a half onion in julienne strips with the carrot and the shredded mushrooms.
  4. Heat sauce a little bit in a pot with a little bit of olive oil, then add it to the rest of the food.
  5. Once everything is already mixed in the pan leave it for about 10 min. over low heat.
  6. You can make a sauce and cut some red onion to garnish.
