Curry Garam Masala with a touch of Apple

Have you tried curry and apples together? This Garam Masala Curry has an amazing touch, it is spicy, rich in flavor plus the sweetness of the apple. I have no doubt that you will go crazy for it.


  • 200 ml Coconut cream
  • 100 ml Cashew cream (optional you can add more coconut cream)
  • 250 g or 1 can chickpeas
  • 2 tablespoons garam masala spice powder or simple curry powder
  • 2 crushed garlic cloves
  • ½ thumb grated fresh ginger
  • 2 chopped tomatoes
  • 3 tbsps nutritional yeast
  • 1 green bell pepper
  • 1 red chili pepper
  • 1 teaspoon curcuma
  • Cumin
  • Bay leave 
  • 2 medium carrots, peeled and chopped into small chunks
  • 1 apple chopped into small chunks
  • 1 medium red onion, finely diced
  • 1 teaspoon salt
  • 2 tablespoons coconut oil
  • Brown rice, as needed
  • Fresh coriander, to garnish
  • Cashew nuts 


  • On medium heat in a pot, sauté the onions in the coconut oil until soft and brown. 
  • then add the garlic, ginger, and the red chili, let them get cook for 2 mins, keep moving the mix. 
  • Add the garam masala spice, cumin, curcuma, and salt.  Let it cook for approximately 1-2 minutes, adding a little water if it begins to stick.
  • Add the tomatoes, and cover for a min, let them soften. At this point, you should have a paste.
  • Now add, the carrots, the green bell pepper, and the diced apple, allow to cook for 10 minutes.
  • Remove the lid, pour the coconut cream, cashew cream, and the chickpeas.
  • You can add water for desired consistency, Allow to simmer for 40-60 min low heat and add 5 bay leaves on top then cover.

Cashew and Curcuma Rice

  • 1 cup brown rice
  • 1 teaspoon garlic powder
  • 1 teaspoon curcuma
  • Salt to taste 
  • 6 cashew nuts ( smash them and make little pieces of it)


  • In a pot boil 2 water cups for 1 cup of rice 
  • Wash the rice then add it to the boiling water 
  • Add the garlic powder, the curcuma, salt to taste and the cashews
  • Let it cook for about 10 min in low heat 

To finish, serve your garam masala curry with the cashew brown rice and garnish with fresh coriander and sesame seeds if you wish.
